Papua New Guinea AA

Green Coffee

Size

Papua New Guinea AA is a washed-process Papua New Guinean coffee, sold in 20 kg bulk. The lot is sourced from the Wahgi Valley in the Western Highlands Province. It is produced by small-holder farmers working in village gardens, the dominant sourcing structure for Papua New Guinea specialty coffee. AA is the Papua New Guinea grade for Screen 18 washed Arabica. It's reserved for the largest and densest beans in the country's classification system. The Wahgi Valley is the site of Kuk Swamp, a UNESCO World Heritage site. Agricultural development at Kuk dates back roughly 10,000 years.

Cupping Profile

The Typica, Catimor, and Caturra cultivar mix combines heritage Arabica with disease-resistant Sarchimor genetics. The Wahgi Valley altitude and washed processing support the cup's floral clarity. The lot suits cafés and roasters building a single-origin filter program or a lighter-bodied espresso component with caramel sweetness.

Processing

This lot is fully washed. Cherries are hand-picked at peak ripeness across the village gardens of the Wahgi Valley, then pulped, fermented, and washed before sun-drying. Papua New Guinea's small-holder structure means the lot is assembled from many family-scale plots rather than a single plantation. This sourcing pattern contributes to the lot's gentle complexity. The AA grade requires Screen 18 or larger, constraining the lot to the most uniformly developed cherries.
