Mexico SHG Chiapas
Green Coffee
Mexico SHG Chiapas is a certified organic, washed-process Mexican green coffee from the Chiapas region, sold in 20 kg bulk. Chiapas is Mexico's largest coffee-producing state, located in the south of the country near the Guatemalan border. The lot is grown at 1,200 metres altitude, qualifying for the SHG grade. SHG stands for Strictly High Grown, the Central American altitude grade for coffee grown above 1,200 metres. The lot uses Bourbon, Catimor, and Caturra cultivars, representing a heritage Arabica plus disease-resistant Sarchimor mix common in Mexican specialty coffee. It suits small-batch roasters and café operators looking for a balanced Mexican single-origin or a versatile blend component.
Cupping Profile
The cool high-altitude growing conditions in Chiapas slow bean development, producing denser cherries with greater aromatic depth. The lot responds well across roast profiles from light to medium-dark, giving roasters flexibility on style and intended use. Notes of chocolate, caramel, and nuttiness can be attained though a medium roast. Subtle citrus or soft fruit highlights emerge with a lighter roast level.
Processing
This lot is fully washed. Cherries are hand-picked at peak ripeness, then depulped, fermented, and washed before sun-drying. The washed process supports the cup's clean finish and balanced structure. Chiapas's cool high-altitude microclimate slows cherry maturation, contributing to bean density and uniformity at Screen 15.
