Indonesia Kopi Luwak Wild
Green Coffee
Kopi Luwak is a green coffee from Panta Reye, Indonesia, sold in 20 kg bulk. The lot is wild-civet sourced and carries Certified Humane third-party verification, distinguishing it from cage-fed Kopi Luwak production. Wild civets roam freely in the Indonesian forest, selecting and feeding on the ripest coffee cherries. The beans are recovered from the forest floor after natural digestion. Kopi Luwak takes its name from Indonesian: kopi means coffee, and luwak refers to the civet.
Cupping Profile
The civet digestion process produces the low-bitterness signature. Enzymes in the civet's digestive tract break down some of the proteins that contribute to perceived bitterness in conventional coffee. The result is a smoother, more rounded cup than equivalent unprocessed Indonesian Arabicas at the same altitude and varietal mix.
Processing
This lot uses the natural-process method with pulp retained, distinct from the semi-washed Giling Basah common to other Indonesian coffees. Wild civets feed on cherries in the Indonesian forest. After natural digestion, the beans are recovered, cleaned, and sun-dried for up to four weeks on raised beds with continuous raking. Drying continues until moisture content reaches roughly 11%. The beans are then hulled to remove the parchment, sorted, and graded. The lot's cultivar mix is Ateng, Tim-Tim, and Bourbon. Tim-Tim (Hybrido de Timor) and Ateng are widely grown Indonesian Arabicas across Sumatra and Java.
