Indonesia Flores Grade 1

Green Coffee

Indonesia Flores Grade 1 is a fully washed Indonesian coffee, sold in 20 kg bulk. The lot comes from the Bajawa region of Flores Island. It is produced by the Sinar Tani cooperative, founded by thirty families in the village of Watujaji. Sinar Tani means 'rays of the farm' in Indonesian. The cooperative grows coffee on the volcanic soils of Mount Inerie, at 1,100 to 1,600 metres altitude. Grade 1 is the highest grade in the Indonesian classification system, allowing no more than eleven defects per 300-gram sample.

Cupping Profile

Expect intense body with notes of blueberry, plum, pepper, and curry. These are pre-roast indications of cup potential, not finished-cup descriptors. The pepper and curry character is distinctive, uncommon in Indonesian coffee and tied to the Flores volcanic terroir and cultivar mix. The combination of S795, Typica, Catimor, and Timor Hybrid contributes both heritage Arabica character and disease-resistant Sarchimor genetics. The lot suits cafés and roasters looking for an unusual Indonesian cup with savoury complexity, well outside the chocolate-and-malt Sumatra default.

Processing

This lot is fully washed. Cherries are hand-picked at peak ripeness on the slopes of Mount Inerie, then pulped, fermented, and washed before sun-drying. Full washing distinguishes the lot from the wet-hulled Giling Basah method that defines most Indonesian coffee. The Sinar Tani cooperative formed in the early 2000s after a regional water development initiative brought reliable fresh water to forty Flores villages. That initiative, the Otonomi Program supported by Terra's Humaniterra Foundation, opened the way for coffee cultivation in Bajawa. The cooperative operates within the matrilineal Ngada culture of Bajawa, where farming knowledge passes from mother to daughter.
