Honduras Copán SHG EP

Green Coffee

Size

Honduras Copán SHG EP is a certified organic, washed-process Honduras green coffee, sold in 20 kg bulk. Honduras is Central America's largest coffee producer by volume. The lot comes from a small cooperative of producers in Copán, in western Honduras. The cooperative employs traditional production methods carried forward from French and German immigrant settlers. The lot is grown between 1,500 and 2,000 metres altitude, qualifying for the SHG EP grade. SHG stands for Strictly High Grown, an altitude grade for Central American coffee. EP stands for European Preparation, a defect-sorting standard stricter than standard preparation.

Cupping Profile

The lot's sweetness and clarity reflect high-altitude Copán growing conditions, where cool temperatures slow cherry maturation and concentrate sugars. Honduran SHG EP coffee from Copán typically presents as a clean, balanced coffee. The lot suits cafés and roasters looking for a Central American single-origin.

Processing

This lot is fully washed. Cherries are hand-picked at peak ripeness, then depulped, fermented, and washed before sun-drying. The washed process supports the cup's clean finish and bright sweetness. EP (European Preparation) defect sorting removes more imperfect beans than standard preparation, producing a cleaner cup and a more uniform roast. The lot includes Caturra, Typica, Bourbon, Pacas, and Villa Sarchi cultivars from the cooperative's plots across Copán.
