Ethiopia Sidamo Shefina Grade 4 Natural is a natural-process Ethiopian coffee, sold in 20 kg bulk. The lot comes from the Shefina Highlands of the Sidamo region in southern Ethiopia. The lot is produced by a collective of 1,099 smallholder farmers across 1,450 hectares, at 1,850 to 2,100 metres altitude, under agroforestry shade trees. Grade 4 is the standard specialty grade for natural-process Ethiopian coffee. Natural and washed lots use different defect thresholds, so Grade 4 natural is the procurement equivalent of Grade 2 washed. The lot uses heirloom Arabica cultivars, mixed native landrace varieties from coffee's genetic origin in Ethiopia.

Cupping Profile

The natural dry process develops the fruit-forward character that distinguishes Sidamo naturals from their washed counterparts. This lot reads brighter and more aromatic than washed Sidamo lots from the same region. Ethiopian heirloom cultivars contribute the genetic diversity unique to Arabica's birthplace. The lot suits cafés interested in a fruit-driven Ethiopian filter or a bright single-origin espresso.

Processing

This lot is a natural dry process. Ripe cherries are hand-picked and dried whole, retaining the fruit around the bean throughout drying. The fruit's sugars and acids transfer into the bean during drying, contributing to the characteristic fruit-forward natural profile. The 1,099-farmer collective practices agroforestry, growing coffee under shade trees that support soil fertility and biodiversity around the plots. The Shefina Highlands' high altitude produces dense, slow-developing cherries that hold sugar content during the extended natural drying.
