Ethiopia Sidamo Shefina Grade 2 is a certified organic, washed-process Ethiopian coffee, sold in 20 kg bulk. The lot comes from the Shefina highlands of the Sidamo region in southern Ethiopia. Sidamo is one of Ethiopia's three trademarked coffee regions, alongside Yirgacheffe and Harrar, registered by the Ethiopian Intellectual Property Office in 2005. The lot is grown by small-plot farmers at 1,890 to 2,010 metres altitude, using mixed heirloom Arabica varieties native to Ethiopia. Grade 2 indicates a high-quality lot with minor defects. The lot scores between 85 and 87 in cupping assessments, placing it in the SCA specialty range.

Cupping Profile

Expect a full body, low acidity, floral aroma, and a sweet, soft finish. These are pre-roast indications of cup potential, not finished-cup descriptors. The lot's cup scores in the 85-87 SCA specialty range. Ethiopian heirloom cultivars contribute genetic diversity unique to Arabica's birthplace. The lot is a blend of native landrace varieties rather than a single bred selection. The softer, sweeter profile suits cafés looking for an accessible Ethiopian filter or a balanced espresso component.

Processing

This lot is fully washed under the standard Sidamo method. Cherries are hand-picked at peak ripeness on small plots across the Shefina highlands, then pulped, fermented, and washed before sun-drying. Small-plot farming in Sidamo means the lot is assembled from many family-scale producers rather than a single estate. The Shefina highlands sit at very high altitude, producing dense, slow-developing cherries that contribute to the lot's body and cup integrity.
