Whole beans for grinding fresh at home. Best flavour and flexibility for any brew method.

Décaféiné is a South American Arabica filter blend built for cafés that want to offer a serious decaf – one that satisfies regular-coffee drinkers, not just those avoiding caffeine. It is naturally decaffeinated using the sugar cane (EA) method, which removes the caffeine while keeping the cup rich and recognizable. The blend ships as whole beans in 340 g and 907 g retail bags, as well as 1 kg and 3 kg bulk bags. Micro-roasted in small batches in Montréal, it gives staff a dependable decaf option for batch brew and after-dinner service.

Tasting Notes

The cup is rich, smooth, and classic – a full, rounded profile that reads as a quality coffee first and a decaf second. It is well suited to customers who order decaf by preference rather than necessity. The profile described here is for our 60% Light Medium 40 % Medium Dark roast.

Origin

Décaféiné is built on South American Arabica selected for a clean, balanced cup. The single-species Arabica base keeps the profile smooth and free of harsh edges, which carries through the decaffeination process intact.

Decaffeination

The beans are decaffeinated using a natural ethyl acetate (EA) process derived from sugar cane – the method behind the "Sugar Cane Decaf" designation. It removes at least 97% of the coffee's caffeine using a naturally sourced solvent rather than a synthetic one, a distinction worth communicating to caffeine-conscious customers.

Roast

Décaféiné is offered in three roast levels. The Light Medium roast keeps the cup brighter and preserves more of the blend's clarity; the Medium Dark roast builds body for a fuller, rounder cup. The 60% Light Medium 40 % Medium Dark is desidnged to make the perfect drip coffee. Note that decaffeinated beans are more porous, so the exterior darkens faster than the interior during roasting – the beans can look darker than the cup actually drinks.

Brewing

As a general guideline, aim for a 1:16 ratio – roughly 1 gram of coffee to 16 grams of water for a balanced cup – though brew method matters. For drip and filter service, use 8.5 g of coffee per 236.56 ml (8 oz) of water, about 36 g per litre at batch scale. Filter and pour-over best showcase this coffee's balanced, smooth character.
