Nicaragua Maragogype Il Cielo Estate
Green Coffee
Nicaragua Maragogype Il Cielo Estate is a washed-process Nicaraguan coffee, sold in 20 kg bulk. The lot is selected by bean size from Hacienda Il Cielo, a 139-hectare estate in central Nicaragua's Peñas Blancas region. Maragogype here designates the largest bean grade (Screen 20+), graded from the estate's H1/H3, Caturra, and Marsella cultivars. The Maragogype designation traces to a Bourbon mutation discovered in the Maragogype region of Brazil in 1870. The mutation is recognized for unusually large beans and broad leaves. The cultivar is also a parent of the Pacamara variety bred in El Salvador.
Cupping Profile
Sweet chocolate fragrance, bright tangy lemon acidity, and crisp green apple notes. These are pre-roast indications of cup potential, not finished-cup descriptors. The Maragogype bean size at Screen 20+ does not directly determine cup character. Larger beans tend to roast more evenly and develop fuller body. The lot suits cafés building a single-origin filter offering or specialty espresso with bright acidity.
Processing
This lot is fully washed. Cherries are hand-picked at peak ripeness on Hacienda Il Cielo's coffee plots, then pulped, fermented, and washed before sun-drying. The estate operates 139 hectares of coffee with an additional 279 hectares of preserved forest, a roughly two-to-one conservation ratio. The Cerna family has managed the estate since 1990, employing around 670 local families across harvest and off-season work. After processing, the lot is graded by bean size, with Screen 20+ beans separated as the Maragogype selection.
