Kopi Luwak
Roasted Coffee
Terra's Kopi Luwak Gran Riserva is a single-origin Arabica from the Indonesian archipelago. It is sourced from wild Asian palm civets living freely in the region's coffee forests – not farmed or caged operations. Available in 125 g tins and1 kg bulk, it suits premium menu placements where provenance anchors the offer. Roasted in Montréal using Terra's TAG method, it delivers an aromatic cup with low natural bitterness and a clean, smooth finish.
Tasting Notes
The cup presents earthy base notes with a full, rounded body and notably low acidity. Natural enzymatic transformation during digestion reduces protein compounds in the bean, which producers attribute to the coffee's characteristic absence of bitterness. Performance is consistent across espresso and filter extraction.
Origin
At 1600 m elevation across the Indonesian archipelago, wild Asian palm civets selectively consume ripe coffee cherries by instinct – not by direction. Field workers collect the passed beans by hand from the forest floor. The labour required for authentic wild harvest limits annual production and separates this material from farmed alternatives.
Roast
The TAG (Torrefazione Artigianale Granito) method drives the complete caramelization of the bean's natural sugars, drawing out the full depth of the coffee. The result is a rich, complex cup built on more than four decades of green-bean selection, roasting, and cupping expertise.
Brewing
As a general guideline, aim for a 1:16 ratio – roughly 1 gram of coffee to 16 grams of water for a balanced cup – though brew method matters. For drip and filter service, use 8.5 g of coffee per 236.56 ml (8 oz) of water, about 36 g per litre at batch scale. For a double espresso, use 16–20 g to yield about 60 ml.
