Cuba Caracolillo
Green Coffee
Cuba Caracolillo green coffee is a washed-process peaberry lot from the Escambray mountains of central Cuba, sold in 20 kg bulk. Caracolillo is the Spanish term for peaberry: a coffee cherry that produces a single round bean instead of the usual two. The mutation accounts for less than 2% of Cuba's total coffee production. That scarcity makes this lot a genuine specialty offer for cafés and roasters anchoring a Cuban-coffee program.
Cupping Profile
The peaberry format roasts evenly and develops a denser cup body than equivalent flat-bean lots. That makes it well-suited to single-origin espresso programs. The dark chocolate carries through cleanly, giving roasters a cup story to build a Cuban-coffee menu around. Expect intense aromas, a smooth texture, and dark chocolate as the dominant note. These are pre-roast indications of cup potential, not finished-cup descriptors.
Processing
This lot is fully washed. Cherries are hand-picked at peak ripeness across the Escambray's mid-altitude slopes, then depulped and fermented before drying. The coffee grows under shade canopy in humus-rich soil without synthetic fertilizers – practices the trade values even where formal organic certification is absent. The Escambray's mica- and quartz-rich soils, moderate climate, and steady Atlantic trade winds shape the microclimate that gives this lot its character. Hand-harvesting and shade cultivation are part of Cuba's traditional coffee production model.
