Colombia Pink Bourbon
Green Coffee
Colombia Pink Bourbon is a washed-process Colombian green coffee, sold in 20 kg bulk. The lot is sourced from the Pitalito municipality in southern Huila, Colombia, grown at 1,500 to 2,000 metres altitude. Pink Bourbon is a distinct Bourbon-family cultivar that emerged in Huila, identified by its pink cherries at harvest. Genetic studies trace it to a natural cross between Red and Yellow Bourbon varieties, producing the pink coloration in mature cherries. The lot is graded Screen 16-17, a solid specialty bean size.
Cupping Profile
Pink Bourbon's distinctive fruit-forward character is one of the cultivar's hallmarks in Colombian specialty coffee. It separates Pink Bourbon from the more chocolate-driven profile of Red Bourbon and Caturra. The lot suits cafés building a single-origin program with bright fruit-forward acidity or roasters offering Pink Bourbon as a specialty Colombian highlight.
Processing
This lot is fully washed. Cherries are hand-picked at peak ripeness, then depulped, fermented, and washed before sun-drying. The washed process strips the fruit cleanly from the bean, preserving the cultivar's natural floral and fruit aromatics. Pink Bourbon's pink cherry colour at maturity is the field marker farmers use to time harvest. Fully ripe cherries display the saturated pink that signals peak sugar content. Pitalito's high altitude produces dense, slow-developing cherries that support the cup's clarity and aromatic complexity.
