Brazil Bela Vista Anaerobic

Green Coffee

Size

Brazil Bela Vista Anaerobic is an anaerobic-fermented Brazilian coffee, sold in 20 kg bulk. The lot comes from the Bela Vista estate in the Sul de Minas region of Brazil. It is one of two processing approaches offered from this estate. The other is Bela Vista Pulped Natural, a same-altitude, same-cultivar lot using a semi-washed method. Both lots share the estate's underlying production: Yellow Catuai and Mundo Novo cultivars grown at 1,100 to 1,200 metres altitude in southern Minas Gerais. The processing methods diverge entirely from there.

Cupping Profile

The extended in-contact fermentation produces a profile that runs sweeter and more fruit-driven than the estate's pulped natural lot. Brazilian Bela Vista coffee in any process typically carries chocolate and nut character. This anaerobic version layers fruit complexity and wine-like depth over that base. The lot suits cafés building specialty single-origin programs or experimental espresso menus.

Processing

This lot uses an anaerobic-fermented drying method developed at Bela Vista. Cherries are placed in specialized drying boxes where the temperature cycles between hot and cold air every 12 hours. The cherries dehydrate slowly while remaining in contact with each other, allowing extended fermentation throughout drying. The 12-hour cycling controls the rate of dehydration and fermentation. This produces the fruity, wine-like character that distinguishes anaerobic Brazilian lots from washed and pulped natural processes. The result is a procurement-distinct lot from the same estate that produces Terra's Bela Vista Pulped Natural.
