ARIEL Shui Xian

Oolong Tea

Size

ARIEL Shui Xian is a Wuyi rock oolong (yancha) sourced from China's Wuyi Mountains and available in 1 kg bulk format for wholesale accounts. Named after the narcissus flower, Shui Xian (水仙) is among the most celebrated yancha varieties – distinguished by its deep roast character, layered mineral complexity, and a cup that performs consistently across gongfu-style service and western steeping. It is Kosher certified and supported by the Humaniterra Foundation.

Tasting Notes

The cup opens with warm roasted notes – toasted grain, dark chocolate, a trace of dried stone fruit – before giving way to a long mineral and floral finish characteristic of Wuyi terroir. Body is smooth and substantial, with a lingering sweetness that holds well without milk or sweetener. The profile is accessible to customers new to oolong while offering the layered complexity that enthusiasts seek.

Origin

Shui Xian originates in the Wuyi Mountains of Fujian Province, a UNESCO World Heritage site renowned for its mineral-rich "rock" terroir. The yancha tradition demands precise, heavy roasting to develop the oxidised character that defines Wuyi oolong – a process distinct from lightly oxidised or green-style oolongs.

Brewing

Steep 2.5 g per 250 ml at 95 °C for 3–4 minutes. Shui Xian rewards multiple infusions: a second steep at the same temperature and duration yields a softer, more floral expression. For gongfu service, use a higher leaf-to-water ratio and shorter infusion times to develop the full aromatic range.
