ARIEL Pai Mu Tan

White Tea

Size

A classic single-origin Chinese white tea from Fujian Province, served unflavoured to let the leaf carry the cup. Available in 45 g loose leaf tins for shelf programs and in 1 kg loose leaf bulk for foodservice operations running by the cup. The least-processed of the six classic tea types, Pai Mu Tan offers a soft, approachable profile that works well as a daytime menu position or an entry point for guests new to specialty tea.

Tasting Notes

The cup pours a pale honey gold with a delicate, hay-like aroma. The character is mild and gently sweet, with a soft floral lift and notes of sun-dried apricot and almond on the finish. Very low astringency, no bitterness even at extended steep, and a long, clean aftertaste that distinguishes Pai Mu Tan from the more grassy character of green tea.

Origin

Pai Mu Tan – also written Bai Mu Dan, "White Peony" – is one of the four classic Chinese white teas, grown almost exclusively in Fujian Province on China's southeast coast. The leaf is a mix of one young bud and two open leaves, withered and dried with no rolling, no firing, and no oxidation. White tea is naturally rich in antioxidants and naturally lower in caffeine than green or black tea, which makes it a credible position for guests asking for a softer, less stimulating cup.

Brewing

Steep 2.5 g per 250 ml at 90 °C for 3 ½ minutes. White tea is forgiving across a wider service window than green tea – it tolerates a longer steep without turning bitter, which is operationally useful for high-turn service environments. At commercial scale, a 1 kg bag yields approximately 400 portions at 2.5 g per cup. Each 250 ml serving contains zero calories.
