The cherries grow on rugged, shaded highland terrain between 2000 and 2500 m. The name traces to the Red Sea port of Mocha, a hub of the coffee trade between the 15th and 17th centuries.\u003c\/p\u003e\n\u003ch2\u003eRoast\u003c\/h2\u003e\n\u003cp\u003eTAG (Torrefazione Artigianale Granito) is our suggested roast for single-origins. The TAG method drives the complete caramelization of the bean's natural sugars, drawing out the full depth of the coffee. The result is a rich, complex cup built on more than four decades of green-bean selection, roasting, and cupping expertise.\u003c\/p\u003e\n\u003ch2\u003eBrewing\u003c\/h2\u003e\n\u003cp\u003eAs a general guideline, aim for a 1:16 ratio – roughly 1 gram of coffee to 16 grams of water for a balanced cup – though brew method matters.
