Its wine note is characteristic of natural-process Yemeni coffees, where extended cherry drying brings fruit sugars into the bean. The dark chocolate provides structure underneath. The Mokka heirloom cultivar's small bean size and the Bani Matar altitude give this lot a dense, concentrated cup. Hand-picked cherries are dried whole on raised beds in the sun for 10 to 14 days, raked frequently to ensure even moisture loss. The cherries are hulled only after they reach the target moisture content. Natural processing on cherry produces the structural weight and fruit-forward character that define Yemeni Mocha. The Alhamdani family's farms sit at 2,000 to 2,500 metres in shaded valleys of Yemen's western and central highlands. Roughly 900 to 1,000 coffee trees grow per hectare.
